I haven’t tried all the coffee shops in Paris, however, I recently visited 2 and I was pleased with the service and my drink.
Le Guynemer
Address : 78 Rue d’Assas, 75006 Paris. The decor is a bit old, outdated to me but my café crème (latte) was great!

Its decor is a bit old and outdated as well. However, you can seat quietly in one of their comfy chairs to read the newspaper or a good book.
Bonus: This restaurant has a smoke free/heated terrasse (for those like myself that cannot stand cigarette smoke).
Note: You have to order your drink at the bar to be served by a waiter.
